Per modificare il sender delle mail inviate da sendmail (nel mio caso parlo di AIX) bisogna modificare il sendmail.cf (ovviamente sotto etc) e lavorare sul parametro :

# my official domain name
# … define this only if sendmail cannot automatically determine your domain
